Omelet with vegetables and noodles

 


It's so easy to prepare, but it turns out very juicy and delicious! I love such simple and easy recipes! Ingredients: 1 onion; vegetable oil; 2 sweet peppers; 2 small tomatoes; 1 tablespoon tomato paste; salt, spices to taste; ~ 100 ml of water; 2 eggs; instant noodles; parsley optional; 50-70 g of any hard cheese; Cooking method: Chop the onion finely and fry a little in vegetable oil.Finely chop the peppers and tomatoes. Add the pepper to the onion first, stir and simmer a little. Then add tomatoes, tomato paste, salt with spices to taste and 100 ml of water. Mix everything well and simmer for about 10 minutes over low/medium heat.

Break the instant noodle briquette and add it to the vegetables in the pan. Cook for about 5 minutes under the lid. If necessary, add a little water and mix. Break and loosen the eggs. Add the noodles to the pan, stir and put out a little more under the lid so that the eggs are cooked

Grate the cheese, sprinkle the ingredients in the pan, close the lid, turn off the heat and wait for the cheese to melt. A delicious dinner is ready. If desired, you can sprinkle with chopped herbs (I have parsley). Enjoy your meal!
