So we have the minced meat ready. We put it in a deep bowl, add milk and breadcrumbs. Mix everything well. Breadcrumbs are needed in this case in order to retain moisture inside, and due to this, the cutlets turn out to be unusually juicy. Beat in the eggs, salt and pepper. Knead it well again. Now add the pre-melted and cooled butter. Mix it with the meat. We put a frying pan on the stove, pour a couple of tablespoons of oil and heat it up well. We form neat cutlets and fry on a slightly less than medium heat under a lid on both sides. Slowly, they will fry well for 3-4 minutes on each side and brown appetizingly.
