Blueberry Muffins
Blueberry muffins combine an airy texture, an unforgettable berry flavor and healthy ingredients. This recipe uses vegetable oat milk for a delicate texture, and fresh or frozen blueberries add a pleasant sourness. Pastries are suitable for breakfast, a snack or a healthy dessert.
180 ml vegetable oat milk
100 ml vegetable oil
1 egg 200 gsugar
250 g flour
2 tsp baking powder
200 g blueberries
1 tsp vanilla sugar
1 g ground nutmeg
(optional) a pinch of salt
Recipe
- Stage 1
Sift flour with baking powder, add sugar, salt, vanilla sugar and nutmeg. Mix the ingredients. - Stage 2
In another bowl, combine the oat milk, butter, egg and mix. Add this mixture to the bowl with the dry ingredients and stir quickly until all the flour is moistened. - Stage 3
Add blueberries and mix into the resulting dough. - Stage 4
Grease the molds with vegetable oil, spread the dough in them and bake blueberry muffins in a preheated 200 degree oven for about 20 minutes. - Advice
If you use frozen blueberries, do not defrost them – this will prevent the juice from spreading. Nutmeg, if desired, can be excluded, supplemented or replaced with cinnamon, cardamom, ginger, etc.
