Mango pudding
Vegetable milk pudding with hazelnuts is a great option for those who prefer lactose–free desserts or just want to diversify their diet. The combination of hazelnuts and mango creates a truly tropical and refreshing dessert that is perfect for breakfast or a snack.
200 ml vegetable milk with hazelnuts
1 piece ripe mango 1 tbsp
honey 1 tbsp
gelatin 1 tsp
vanilla extract 50 g
Hazelnuts (optional)
fresh mint leaves (optional)
Recipe
- Stage 1
Soak the gelatin in a small amount of water for 5-7 minutes to soften it. After that, heat it in the microwave until it is completely dissolved.
- Stage 2
In a blender or mixer, combine the vegetable milk with hazelnuts, honey and vanilla extract, and whisk until smooth. Add the dissolved gelatin to this mixture and mix thoroughly.
- Stage 3
Take a large ripe mango, peel and remove the bone. Puree most of the fruit, and cut the smaller one into cubes.
- Stage 4
Assemble the pudding: put mango puree on the bottom of the glass, then a mixture of milk and gelatin. Refrigerate until the pudding hardens. Add chopped mango and chopped hazelnuts before serving.
- Advice
If you want a thicker pudding, you can add a little more gelatin or use less milk. And for a beautiful serving, you can also decorate the pudding with mint leaves or lime zest.
